White / headed cabbage (Brassica oleracea var. capitata) is a brassica vegetable with a dense head of pale-green to white leaves. The catalog models headed white cabbage, not Chinese cabbage, cauliflower, broccoli or savoy. Production includes early and late (storage) types; MVP seasonality usually describes the main commercial late harvest.
White cabbage is stewed, boiled, fried, fermented (sauerkraut) and used in salads and soups. Late cultivars store better; early cabbage is more a fresh-season crop. The atlas season is field harvest, not months in storage.
