About
The main white cabbage crop is harvested in autumn, when late cultivars with dense heads mature. Early cultivars ripen sooner and bring an earlier part of the season.

In the kitchen
White cabbage is stewed, boiled, fried and fermented, and added to soups, salads and fillings. A fresh head is crisp with a mild sweetness. Long stewing softens the leaves and brings out a sweeter flavour.
