Bulb onion (Allium cepa) is a biennial allium grown as a vegetable. The edible part is a firm bulb under dry outer skins; flavour ranges from sharp to milder by cultivar. This is not green onion / scallion, and not garlic. In open fields, mature bulbs are lifted for fresh use and storage.
Bulb onions are fried, stewed, roasted and used in soups, sauces and salads. Raw onion tastes sharper; cooking softens it. Dry mature bulbs keep well in storage; the atlas season is field harvest, not months of cellar availability.
