About

Potatoes are available year-round thanks to storage, but the season for the fresh local crop begins in summer. New potatoes arrive first — small tubers with thin skins, moist flesh and a delicate flavor. The main crop matures in late summer and autumn. The tubers grow larger and their skins become firmer, allowing them to store better and gradually replace new potatoes.

In the kitchen

New potatoes are particularly good in simple dishes: boil or roast them whole and serve with butter, dill, spring onions or garlic. Their thin skins usually need nothing more than a thorough wash and can be left on. Mature potatoes are much more versatile: they can be boiled, fried or roasted, made into mash or potato pancakes, and used in soups, stews and fillings. The best cooking method depends greatly on the variety: floury, starchy potatoes are particularly well suited to mash and roasting, while waxier varieties hold their shape better when boiled.

Bounds 1 August and 31 October encode the AUGUST–OCTOBER month window under guidelines §8, not exact calendar start/finish days. The 5 Nov 2025 “nearly complete” note is corroboration only and does not extend the typical season into November. Peak unset: no independent narrower-window evidence.
