Bilberry (Vaccinium myrtillus) is a low deciduous dwarf shrub in the heath family. Stems are usually green and angled; leaves are oval with fine teeth. The fruit is a dark blue to nearly black berry with a waxy bloom, about 5–10 mm across; flesh and juice readily stain hands and the tongue. The taste is sweet-tart. The plant grows in coniferous and mixed forests and on heaths on acidic soils of the boreal zone.
Bilberries are eaten fresh and used for jam, preserves, pie and pastry fillings, desserts, juices and cordials. The dark juice stains food and hands strongly. Berries are often mashed with sugar or cooked into preserves; fresh fruit is soft and bruises easily.
