Lingonberry (Vaccinium vitis-idaea) is a low evergreen dwarf shrub in the heath family. Stems stay short; the leathery oval leaves are dark green and remain through winter. The fruit is a bright red globe about 6–10 mm across with a tart, astringent taste. The plant grows in boreal forests, heaths, clearings and bog margins on acidic, often nutrient-poor soils across northern Eurasia and other boreal regions.
Lingonberries can be eaten fresh, but because they are distinctly tart they are more often processed: cooked into jam and other preserves, made into sauces, juices and cordials, and used in desserts. The berries are frequently mashed with sugar without boiling; their tart flavour holds well in both raw sugar packs and cooked preserves.
